The Vacation That Felt Like a Floating City: Our 7-Night Adventure on Carnival Mardi Gras

But our 7-night cruise aboard the Carnival Mardi Gras felt like stepping into an entirely different world.

From watching a rocket launch over the Atlantic Ocean… to exploring the colorful streets of San Juan… to eating authentic Dominican food in Puerto Plata… this trip became one of those experiences that makes you instantly start planning your next cruise before the current one even ends.

First Impressions: This Ship Is MASSIVE

The moment we boarded the Carnival Mardi Gras out of Port Canaveral, we realized this wasn’t just a cruise ship.

It was basically a floating city.

Everywhere you turned there was something happening.

Live music.
Shows.
Trivia.
Comedy.
Bingo.
Stage productions.
Bars.
Lounges.
Family activities.
Teen hangouts.
Kids programs.

There was never a moment where anyone could say, “I’m bored.”

And the food?

Absolutely endless.

From quick bites to sit-down dinners to desserts at all hours of the day, the hardest part wasn’t finding something to eat…

It was deciding WHAT to eat.

The variety of food and drink options onboard made every day feel different.

A Roller Coaster… ON A SHIP?!

Yes… you read that correctly.

The ship features the first roller coaster at sea.

Seeing a roller coaster sitting on top of a cruise ship in the middle of the ocean feels surreal.

Between the multiple pools, water park, entertainment decks, and activities happening constantly, the ship truly felt like a resort that just happened to move across the Caribbean.

One thing we loved was how family-friendly everything felt.

Parents could relax.
Kids had nonstop activities.
Adults still had nightlife, casinos, bars, comedy clubs, and entertainment.

And for casino lovers?

There’s even a non-smoking casino option, which made the experience far more enjoyable.

Our Balcony Cabin Became Our Favorite Escape

We stayed in a spacious balcony cabin, and honestly, it made the experience even better.

There was plenty of storage, which is important on a 7-night sailing, and waking up to ocean views every morning never got old.

One of the best parts of cruising is slowing down.

Coffee on the balcony.
Ocean breeze.
Watching the sunrise.
Seeing new islands appear in the distance.

Those little moments become some of your favorite memories.

Watching a Rocket Launch at Sea Was Unreal

Then came something completely unexpected.

The first night of our cruise, we witnessed a rocket launch from the Kennedy Space Center.

Standing on the deck of a cruise ship at night while watching a rocket streak into the sky is something I’ll never forget.

Everyone onboard stopped what they were doing.

Phones came out.
People cheered.
The atmosphere was electric.

It felt like the perfect way to begin an adventure.

San Juan, Puerto Rico: History, Culture, and Incredible Food

Our first major stop was beautiful San Juan.

The city instantly pulls you in with its colorful buildings, cobblestone streets, music, and history.

We booked the “History Behind the Walls” walking tour, which brought Old San Juan to life.

We explored Castillo San Cristóbal, walked past El Capitolio, traveled along Constitution Avenue, and explored the South Fortaleza area.

Every street felt like stepping through history.

But the real highlight?

The food.

We ended the day shopping and eating outside at a local café where we ordered authentic Mofongo and Empanadas.

Fresh flavors.
Warm Caribbean air.
Music playing nearby.

It was one of those moments where you sit back and realize:
“This is exactly why people fall in love with travel.”

Amber Cove & Puerto Plata: The Dominican Republic Was Full of Flavor

Our next stop brought us to Amber Cove in the Dominican Republic.

This stop was packed with culture and energy.

We took the “Discover Puerto Plata Traditions & Local Flavors” excursion, and it ended up being one of the most immersive experiences of the trip.

We explored historical Puerto Plata, visited landmarks like Plaza Independencia and the stunning San Felipe Cathedral, and walked down the famous Umbrella Street filled with color and personality.

Then things got even better.

We visited a local cigar factory where we learned how cigars are hand-rolled, toured a rum distillery, and enjoyed authentic Dominican cuisine at a local restaurant.

This wasn’t just sightseeing.

It felt like experiencing the true personality of the Dominican Republic.

Grand Turk: Sometimes the Best Excursion Is Doing Absolutely Nothing

Our final port was beautiful Cockburn Town in the Turks and Caicos Islands.

And honestly?

This stop reminded us that not every vacation moment needs to be packed with activity.

Sometimes paradise is simply a beach chair, crystal-clear water, and zero responsibilities.

The beaches in Grand Turk looked almost too perfect to be real.

Soft sand.
Turquoise water.
Warm sun.
Total relaxation.

After days of excursions and adventure, it was the perfect way to unwind before heading back home.
